The different types of Ibérico Ham are classified under 4 different labels depending on their diet and their racial mix. These labels are certified by the Government of Spain and guarantee their authenticity and quality.
Black Label
Identifies that it is a 100% Iberian Acorn-fed Ham, certifies that the pig’s parents are 100% Iberian breed registered in the Genealogical Book. The black seal informs about the feeding and indicates that in the fattening stage it has fed exclusively on acorn and natural resources of the pasture. It is the highest quality type of Ibérico ham.
Green Label
This seal recognizes the «Cebo de Campo» Ham, the pig of origin of this piece can be 100%, 75% or 50% Iberian. The green color of the label indicates that the pig was fed in its fattening stage with cereal feed, legumes and field herbs. The green label identifies the “Cebo de Campo Ibérico” ham, shoulder or loin.
Red Label
informs that it is an Iberian Acorn-fed Ham, it can come from a pig with 75% or 50% Iberian breed. This red seal indicates that the feeding of the pig, in its fattening stage, has been carried out with acorns and other natural resources from the «dehesa». The red seal guarantees that it is an “Acorn-fed Iberian” ham.
White Label
This label determines that it is an Iberian Cebo Ham, since the specimen from which the ham leg comes can be 100%, 75% or 50% Iberian. In addition, the white seal informs that pig feeding has been carried out on farms based on cereal and legume feed. The white seal indicates that it is a “Cebo Ibérico” product.
